Did you ever wonder how French Fries are made? The potatoes are tranported in a flow of water, and are sprayed out of a giant fire hose with the water. The water and potatoes strike a stationary cutter that has a number of blades arranged on a frame, like the cutter from the patent figure below.
The potato enters from the wide end of the cutter, so the first blade to strike the cutter takes a slice off both the outer sides of the potato. Those slices are then cut by transverse blades, into a fry shape. The potato travels through the cutter assembly, with slices taken off the sides and the slices cut into fries, until the center of the potato hits the end blades, and the whole thing has been turned to fries. This is called hydraulic cutting, since it is water driven.
